Microgreens
Microgreens are young vegetable greens that are harvested just after the cotyledon leaves have developed. They are about 1–3 inches tall and have concentrated nutrient content. Research shows that microgreens may contain 4 to 40 times the nutrients of mature plant leaves. They come in a variety of colors and textures and are used to enhance the appearance, flavor, and texture of foods. Microgreens are not the same as sprouts or shoots.
Broccoli, cabbage, and brussels sprouts are main stays for us as they contain sulforaphane. There are many potential health benefits of sulforaphane.
